Welcome to Monday, friends! As has become custom, I’m linking up with Annmarie at The Fit Foodie Mama and Cassandra at Powered by BLING for a phenomenal collection of vegetarian-friendly dishes for Meatless Monday. There’s another awesome Meatless Monday linkup that I’m joining today as well. Check out Deborah at Confessions of a Mother Runner and Tina at TinaMuir.com!
Today I’m sharing a classic recipe with a twist. Enter sloppy joes. Who doesn’t love a sloppy joe? They make my mouth water just thinking of them! Unfortunately I didn’t think to share this recipe until after I devoured my meal, so I don’t have any photos. Oops.
My recipe for sloppy joes is so easy it’s ridiculous. Instead of using meat, I substitute soy crumbles. Plus, this is a slow cooker recipe. It’s a win-win on all fronts! See below for a yummy, meatless version of this classic dish.
Vegan Sloppy Joes
Ingredients
- 2 packages of Smart Ground protein crumbles
- 1 Tbsp olive oil
- 1 small onion, minced
- 2 stalks celery, minced
- 12 oz chili sauce
- 2 1/2 Tbsp relish
- 2 Tbsp brown sugar
- 1 Tbsp Worcestershire sauce
- 1/4 tsp salt
- 1/8 tsp pepper
- sandwich buns
Directions
Heat oil in a large saute pan over medium high heat. Saute onion and celery until soft and flavors have released. Combine all ingredients in the slower cooker stoneware. Cook on low for 3-4 hours. Serves 6-8.
See? So easy. And so amazing.
Have a great day!
