Recipe Monday: Watermelon, Cucumber and Feta Salad

I have great news! It’s finally summer in the CLE! Holla! It has finally reached acceptable summer temperatures. As I mentioned previously, we were supposed to go camping this weekend and canceled our trip on account of rain which never happened… I’m not bitter because instead of camping it was hot as heck so we hit the pool! First time all summer.

So you know what else happens when it’s summer, right? (Besides the pool and camping, of course.) Picnic-style salads! I honestly can’t believe I haven’t shared this delicious recipe with you yet because it’s super easy, and really yummy. It’s a cool salad which is perfect for a hot summer’s day. Pack it up for a picnic or a BBQ and you won’t be taking home leftovers. Enter Watermelon, Cucumber and Feta Salad.

Watermelon, Cucumber and Feta Salad

Ingredients

 

  • 1 red onion, sliced
  • juice of 3 limes
  • 6 oz crumbled feta
  • 4 C watermelon, cubed
  • 1 C cucumber, peeled and cubed
  • 1 C kalamata olives
  • 1 Tbsp dried parsley
  • 1/2 of a .75 oz package mint leaves, chopped
  • 3 Tbsp olive oil
  • fresh ground pepper, to taste

 

Directions

In a small bowl, pour the juice of three limes over red onions. Toss to combine and set aside. In a large bowl, combine watermelon, cucumber, feta crumbles, olives and herbs.

Add olive oil and gently stir, ensuring everything has a light coating of oil. Add the onions and lime juice to the watermelon mixture, and gently toss.

YUM! I can't have feta, but I'm trying to enjoy as much watermelon as possible this summer!

    You could definitely make this sans feta. You might want to add a pinch of sea salt though so you don't miss out on the saltiness of the cheese.
