One of my favorite ways to ensure I get plenty of protein in my diet is through nuts. I usually make a delicious trail mix chock full of peanuts, almonds, sunflower seeds, and cashews. But sometimes nuts get a little boring, even in a trail mix with dried fruit and chocolate chips, so I try to get creative and add in peanut protein in other ways.
I recently made a delightful stir fry featuring peanuts, mirin, and toasted sesame seeds. It’s a simple dish but very flavorful and packed with vitamins and nutrients.
Broccoli Peanut Stir Fry with Tofu and White Rice
- 2 tsp sesame oil
- 1 orange bell pepper, diced
- 1 red bell pepper, diced
- 1 1/2 heads broccoli florets, torn into bite sized pieces
- 1 zucchini, halved and thickly sliced
- 1/4 C peanuts
- 2 Tbsp mirin
- 2 Tbsp Tamari
- 1 Tbsp toasted sesame seeds
- 1 package tofu, sliced 1/4″ thick
- 1 C white or sushi rice
Heat oil in a large wok over medium-high heat. Add broccoli and zucchini and toss for 5-7 minutes. Add bell peppers, peanuts, mirin, tamari, and sesame seeds. Cook and toss until veggies are crisp-tender.
While veggies are cooking, make the rice according to package instructions. Heat a skillet over medium heat to pan fry the tofu. Cook tofu and carefully turn each piece until both sides are lightly browned. Remove from heat and transfer to a cutting board. Carefully slice the tofu slices into bite sized pieces.
When vegetables are almost done, add the tofu and toss lightly. Add additional Tamari if desired.
Serve over white, or sushi, rice. Enjoy!
Peanuts are a fantastic source of protein. Couple them with a plethora of colorful vegetables and you’ll be sure to hit all the nutrients essential to a healthy lifestyle.
