Stay Healthy with the ‘So Good’ Citrus Salad

January 9, 2017

As I mentioned last week in my first Meatless Monday post of the year, I’m making a very concerted effort to eat healthier and live more intentionally in 2017. I’m generally a fairly conscientious eater, but my one vice happens to be sugar. Interestingly enough, I came across this article over the weekend and thought it was pertinent to what I’m doing in regard to sugar — and why I’m doing it. Give it a read. It’s lengthy but definitely worth it.

Moving along to today’s recipe, I really wanted to try something light, yet filling and satiating. As I was making a supplemental dinner for my daughter over the weekend, consisting of eggs and avocados, I had an a-ha moment. A little lightbulb went off in my head and I started gathering food items. My husband looked and me and said, “you’re creating, aren’t you?” He knows me so well. 😉

In my quest for something light and satiating, I brought together three simple ingredients: cherry tomatoes, clementines, and avocados. Topped with a little sprinkling of citrus dressing and it’s perfection in a bowl.

Everything in this salad is really great at boosting the immune system. Cherry tomatoes boast vitamins E, B6, A, C, and K to name a few. Clementines are known for their vitamin C and calcium, plus potassium, too. And avocados, as we know, are an incredible source of good fats in our diets but did you know they contribute nearly 20 vitamins, minerals, and plant compounds to our diets as well? Amazing.

Be healthy + eat well w/ the 'So Good' Citrus Salad - it's so good... #MeatlessMonday #easyrecipe

This salad is so good that my son dubbed it the So Good Citrus Salad. And the name stuck.

Enjoy!

It’s a real eye opener. Well, more of what I already knew, but a lot more in depth. Hope you find it as enlightening as I did.

I am one of the very few who don’t like avocados….I need to just bite the bullet and eat them anyways. Any suggestions? can I sprinkle some sugar on them? 😉

Haha, you could but I’m not sure it would taste very good. It took me a really long time to get on board with avocados so don’t feel bad. They’re not for everyone.

Hi Rachel! I’m trying to be Fit and Fabulous this year and although my ‘diet’ is not too bad I wanted to tweak it a little and like you reduce sugar intake. This recipe looks so refreshing although I’ve never tasted clementines and not sure if we even have them in Australia!

Hmmm, that’s interesting — clementines are a small citrus fruit. Do you have mandarins, satsumas, or even just a simple sweet orange? Any of those would work.

Speaking of sugar… it’s in EVERYTHING here in the states. Do you have the same problem in Australia? I can’t even eat a cracker without eating refined sugar!

We certainly do have a sugar problem in Australia Rachel and I’m just not sure what the answer is. Education doesn’t seem to be working! Yes we have mandarins so that could be a substitute I’m sure. Have a great week!

It totally tastes like Florida. Remember those Tropicana commercials where they used to stick a straw in the orange? I always wanted to do that… I digress…

That salad looks delicious! I have trouble with sugar too. I am participating in a “sugar detox” this week to see if I feel better. I do feel sluggish at times even though I think I am in good shape!

I’m convinced sugar is causing all sorts of problems in my body. I’m hesitant to say gluten or dairy but those might both be next on the chopping block.

I hope you start feeling better after your detox!
