I have a special Meatless Monday recipe to share with you today. But first, let’s talk about breasts, shall we?

Dr. Kristi Funk recently released a new book, Breasts: The Owner’s Manual. Some of you may recognize Dr. Funk as the breast surgeon for Angelina Jolie and Sheryl Crow. She’s a leading board-certified breast cancer surgeon and specialist in comprehensive wellness. Her new book is all about breasts and breast cancer. She covers topics such as breast health basics, cancer prevention, risk factors, and of course, medical choices.

I received a complimentary copy of Dr. Funk’s book as a Meatless Monday blogger. 

One of the recipes created by Dr. Kristi Funk and Chrissy Roth (certified plant-based nutritionist) is an amazing three bean salad recipe. I’m excited to share it with you because not only is it delicious, it’s also extremely easy to prepare. With picnic season just kicking off, it’s the perfect side dish to make-and-take! It’s delicious every day of the week, too — not just for Meatless Monday.

I made this three bean salad for an impromptu picnic with my family. My kids devoured it! I’ll definitely add it into permanent rotation this summer since it is definitely a crowd pleaser!

Three Bean Salad — Great for Picnics and Meatless Monday!

Three Beans Walk into a Salad…

Ingredients

  • 1 can black beans (rinsed well)
  • 1 can kidney beans (rinsed well)
  • 14 oz can chickpeas (rinsed well, save chickpea liquid)
  • 1 avocado cut into half inch cubes
  • 2 Persian cucumbers chopped into 1/2 inch cubes
  • 1/2 cup tomatoes (chopped)
  • 1 tsp fresh oregano (preferred) or 1/2 tsp dried oregano
  • 2 to 3 T of red wine vinegar
  • 1-2 T chickpea liquid
  • Salt and pepper to taste

Directions

Combine beans, veggies and avocado and toss gently. Add oregano, then toss, add chickpea liquid, then red wine vinegar and salt and pepper to taste.

Tip: Chill the beans before making this if you are planning to eat it right away. Or you can make it (minus the avocado), chill for an hour, then add the avocado right before serving.

If I would have read this 15 minutes ago, I would have made this for lunch as I have all the ingredients! It does look delish! On my menu for tomorrow.

I adore all kinds of chilled summer salads made with all the yummy vegetables. They are so perfect for regular meals, or beach picnics or just about anything!

I am not much of a bean-eater, but this sounds awesome with the tomatoes and oregano mixed in! Healthy lifestyle? How about training for and running a dumb marathon? That’s my answer 😉

I’m going to make this for lunches!! perfect and portable! (I won’t enter your contest as I’m not in the States but I do a LOT for a healthy lifestyle! biking, running, walking, eating healthy, avoiding sodas and fast food you name it! )
